  • 10 ggelatin
  • 1 tbspcoffee

Instructions

  1. Pan-toast 50g almonds and roughly chop.

  2. Bloom 10g gelatin in 100ml water and brew 1 tablespoon coffee (or cocoa), then let both cool.

  3. Melt the gelatin in a water bath and blend 3-4 bananas until smooth.

  4. Whisk the cooled coffee and gelatin into the banana puree and beat for a few minutes until airy.

  5. Pour into glasses, top with sliced peaches and toasted almonds, then chill until set.
