No-Bake Chocolate Avocado Apricot Layered Parfait

Ingredients

  • 50 gdark chocolate

    melted in a water bath

  • 30 gwalnuts
  • 10 grice cakes
  • 1avocado
  • 1banana
  • 20 gcocoa powder
  • 100 gdried apricots

    soaked 15-30 minutes in oat milk

  • 250 mloat milk
  • 30 gcoconut sugar
  • orange zest
  • ¼ tspagar-agar

Instructions

  1. Melt 50g dark chocolate in a water bath, mix with 30g chopped walnuts and 10g crushed rice cakes, then press into glasses and chill.

  2. Blend 1 avocado, 1 banana and 20g cocoa into a smooth cream and spread on top of the first layer.

  3. Soak 100g dried apricots in 250ml oat milk for 15-, then blend with 30g coconut sugar and the orange zest.

  4. Simmer the apricot cream with 1/4 teaspoon agar-agar for a few minutes, then pour over the avocado layer.

  5. Chill in the fridge until set and decorate with berries and nuts before serving.
