No-Bake Cherry Chocolate Bonbons (Vegan, Gluten-Free)

Frozen cherry-agar centres dipped in a cocoa-coconut oil chocolate glaze. A fruity vegan bonbon cooled in the freezer, finished with a glossy shell.

Ingredients

  • 50 mlwater
  • 20 gcoconut sugar

    for the filling

  • 200 gcherries

    blended

  • 7 gagar-agar
  • 100 gcoconut sugar

    blended, for the glaze

  • 80 gcoconut oil

    40g per glaze batch

  • 40 gcocoa powder

    20g per glaze batch

Instructions

  1. Simmer 50ml water with 20g coconut sugar and 200g blended cherries, add 7g agar-agar and boil for .

  2. Pour the cherry mixture into small moulds and freeze until fully set.

  3. Blend 100g coconut sugar to fine powder; warm 40g coconut oil over a water bath until clear.

  4. Mix the melted coconut oil with 20g cocoa and 2 teaspoons blended coconut sugar for the first glaze batch.

  5. Dip the frozen cherry centres in the glaze on all sides, return to the freezer, and make a second glaze batch with the remaining oil, cocoa and coconut sugar for a second coat.
