Soft cashew-date balls bound by melted dark chocolate and brightened with lemon juice and zest, rolled in coconut flakes. Chilled until firm, naturally sweet.

Ingredients

  • 160 gcashews

    soaked 4 hours in boiling water

  • 120 gdates

    soaked 10 minutes in boiling water

  • 50 gdark chocolate

    melted in a water bath

  • 1lemon zest
  • 1½ tbsplemon juice

    1-2 tablespoons

  • coconut flakes

    for rolling

Instructions

  1. Soak 160g cashews in boiling water for , then drain.

  2. Soak 120g dates in boiling water for , drain and pit.

  3. Melt 50g dark chocolate in a water bath.

  4. Blend cashews and dates with 1/2 lemon's zest and 1-2 tablespoons lemon juice until smooth, then stir in the chocolate.

  5. Chill the mixture for 15-, roll into balls and coat in coconut flakes.
