soaked 4 hours in boiling water
- 120 gdates
soaked 10 minutes in boiling water
- 50 gdark chocolate
melted in a water bath
- 1lemon zest
- 1½ tbsplemon juice
1-2 tablespoons
- coconut flakes
for rolling
Instructions
Soak 160g cashews in boiling water for , then drain.
Soak 120g dates in boiling water for , drain and pit.
Melt 50g dark chocolate in a water bath.
Blend cashews and dates with 1/2 lemon's zest and 1-2 tablespoons lemon juice until smooth, then stir in the chocolate.
Chill the mixture for 15-, roll into balls and coat in coconut flakes.
