Ingredients

  • 100 gdried apricots

    soaked in boiling water

  • 50 gdark chocolate

    melted in a water bath

  • 60 gcashews

    toasted in a pan, finely chopped

  • 1 tbsphoney
  • 30 gsesame seeds

    toasted in a pan, for rolling

Instructions

  1. Soak 100g dried apricots in boiling water, then drain and chop very finely with a knife.

  2. Melt 50g dark chocolate in a water bath and toast 60g cashews in a dry pan before chopping them small.

  3. Mix apricots, cashews, melted chocolate and 1 tablespoon honey until combined and let rest for .

  4. Toast 30g sesame seeds in a pan, then shape the mixture into small truffles and roll each in sesame.

  5. Store the truffles in the fridge until firm before serving.
