No-Bake 2-Ingredient Date Coconut Energy Balls

  • 340 gMazafati dates

    soaked 10-15 minutes in hot water

  • 15macadamia nuts

    optional, for the centres

  • 100 gcoconut flakes

    for rolling

Instructions

  1. Cover 340g Mazafati dates with hot water and soak for 10-, then drain and pit them.

  2. Grind the dates in a blender until a smooth, chewy paste forms.

  3. Lightly oil your hands, scoop portions of the paste and optionally press a macadamia nut into the centre.

  4. Roll each ball evenly in 100g coconut flakes until fully coated.

  5. Store the balls in the fridge; they can be eaten straight away.
