- 2eggs
- salt
a pinch
- 3 tsperythritol
2-3 teaspoons, or any sweetener
- 30 gbutter
- 1vanilla packet
- 200 gpeanut butter
- 170 galmond flour
- 1 tspbaking powder
Instructions
Whisk 2 eggs with a pinch of salt and 2-3 teaspoons erythritol until frothy.
Melt 30g butter, cool slightly and beat into the eggs with the vanilla.
Stir in 200g peanut butter, 170g almond flour and 1 teaspoon baking powder until a thick dough forms.
Shape into cookies and place on a parchment-lined tray.
Bake at 180°C for , then cool on the tray before serving.
