  • 2eggs
  • salt

    a pinch

  • 3 tsperythritol

    2-3 teaspoons, or any sweetener

  • 30 gbutter
  • 1vanilla packet
  • 200 gpeanut butter
  • 170 galmond flour
  • 1 tspbaking powder

Instructions

  1. Whisk 2 eggs with a pinch of salt and 2-3 teaspoons erythritol until frothy.

  2. Melt 30g butter, cool slightly and beat into the eggs with the vanilla.

  3. Stir in 200g peanut butter, 170g almond flour and 1 teaspoon baking powder until a thick dough forms.

  4. Shape into cookies and place on a parchment-lined tray.

  5. Bake at 180°C for , then cool on the tray before serving.
