  • 2eggs
  • salt

    a pinch

  • 2 tbsperythritol

    or sugar

  • 40 gbutter

    melted

  • 150 gcottage cheese
  • 100 galmond flour
  • 1 tspbaking powder
  • olive oil

    for greasing the tin

Instructions

  1. Whisk 2 eggs with a pinch of salt and 2 tablespoons erythritol.

  2. Beat in 40g melted butter and 150g cottage cheese until smooth.

  3. Stir in 100g almond flour and 1 teaspoon baking powder.

  4. Slice 3-4 peaches and fold gently through the batter.

  5. Pour into an oiled tin and bake at 180°C for 20-.
