Ingredients

Ingredients updated to metric measurements
  • 100 galmond flour
  • ½ tspbaking powder
  • pinchsalt
  • 75 gavocado flesh

    half avocado

  • 1egg
  • lemon

    zest and juice of 1/2

  • 3 tbspstevia

    2x-sweet

  • 25 gcocoa powder

    for frosting

Instructions

  1. Combine 100g almond flour, 1/2 teaspoon baking powder and a pinch of salt.

  2. Blend 75g avocado flesh with 1 egg, zest and juice of 1/2 lemon and 3 tablespoons stevia.

  3. Fold the wet mixture into the dry to form a thick dough.

  4. Pipe 10 cookies onto an oiled tray and bake at 170°C (340°F) for 12-.

  5. Whip 1/2 avocado with 1/2 lemon juice, 2 tablespoons stevia and 25g cocoa; spread over the cooled cookies.
