- 100 galmond flour
- ½ tspbaking powder
- pinchsalt
- 75 gavocado flesh
half avocado
- 1egg
- lemon
zest and juice of 1/2
- 3 tbspstevia
2x-sweet
- 25 gcocoa powder
for frosting
Instructions
Combine 100g almond flour, 1/2 teaspoon baking powder and a pinch of salt.
Blend 75g avocado flesh with 1 egg, zest and juice of 1/2 lemon and 3 tablespoons stevia.
Fold the wet mixture into the dry to form a thick dough.
Pipe 10 cookies onto an oiled tray and bake at 170°C (340°F) for 12-.
Whip 1/2 avocado with 1/2 lemon juice, 2 tablespoons stevia and 25g cocoa; spread over the cooled cookies.
