Fudgy brownies built on soaked red lentils, cocoa and cinnamon, studded with berries and sugar-free dark chocolate. Naturally gluten-free and surprisingly rich.

Ingredients

Ingredients updated to metric measurements
  • 200 gred lentils

    soaked at least 2 hours, then drained

  • 75 mlwater
  • 35 mlolive oil
  • 1 gvanilla
  • 1 tspcinnamon
  • 50 gcocoa powder
  • 5 gbaking powder
  • berries

    a handful

  • 50 gsugar-free dark chocolate

Instructions

  1. Soak 200g red lentils in water for at least , then drain.

  2. Blend the lentils with 75ml water, 35ml olive oil, 1g vanilla and 1 teaspoon cinnamon until smooth.

  3. Stir in 50g cocoa powder and 5g baking powder.

  4. Grease a 15cm silicone mold with olive oil and transfer the batter. Top with a handful of berries and 50g sugar-free dark chocolate chunks.

  5. Bake at 180°C for until just set but still fudgy in the center.

  6. Cool before slicing — the brownies firm up as they cool.
