Moist flourless almond cake with blended orange and baked apple, flavoured with poppy seeds and coconut sugar. Topped with a glossy orange sauce for a festive finish.

ground in a blender
- 50 gpoppy seeds
- 80 gcoconut sugar
- 1 tspbaking powder
- 1orange

Instructions
Grind 150g almonds in a blender, then mix with 50g poppy seeds, 80g coconut sugar and 1 teaspoon baking powder.
Boil 1 orange whole for , change the water, then simmer for another hour until soft.
Bake a few apples in the oven until soft and blend to get about 100g applesauce.
Blend the boiled orange with 100g applesauce, 1 teaspoon vanilla essence and 2 tablespoons coconut milk. You need about 290g of this orange-apple mixture.
Combine the wet mixture with the almond mixture and pour into a greased pan (24cm, 20cm works even better).
Bake at 180°C for .
For the sauce: simmer orange zest, 150ml orange juice, 3 tablespoons coconut sugar and 2 teaspoons cornstarch for 3-, then blend with 30ml coconut oil.
Let the sauce cool and pour over the cooled cake before serving.
