  • 1cucumber

    salted, rested 15 min, drained

  • Chinese cabbage

    a few leaves, shredded

  • 1red bell pepper
  • 1onion

    lightly sauteed

  • refined olive oil
  • green onions
  • 3 tbspyogurt
  • 1 tspdried tomatoes
  • Italian herbs
  • 2 tspDijon mustard
  • 1 tsprice vinegar
  • 1 tsphoney

    or sugar-free syrup

Instructions

  1. Slice 1 cucumber, salt it and rest , then drain the released juice.

  2. Shred a few Chinese cabbage leaves, dice red bell pepper and lightly saute 1 sliced onion in refined olive oil.

  3. Combine 3 tablespoons yogurt, 1 teaspoon dried tomatoes, Italian herbs, 2 teaspoons Dijon mustard, 1 teaspoon rice vinegar and 1 teaspoon honey.

  4. Toss the vegetables with green onions, pour over the dressing and season with a little extra salt.

  5. Mix gently and serve immediately — the salad stays crisp and filling for light dinners.
