Almond Date Truffles with Dark Chocolate Peanut Coating

Homemade candies of toasted almonds, dates, raisins and honey, coated in melted dark chocolate mixed with crushed peanuts. No refined sugar, simple and festive.

Ingredients

Ingredients updated to metric measurements
  • 200 galmonds

    pan-toasted

  • 20 gcoconut flakes
  • 130 gdates

    pitted

  • 35 graisins
  • 3 tbsphoney
  • 35 gpeanuts

    toasted

  • 140 gdark chocolate
  • 1¼ tbspvegetable oil

    1 to 1.5 tbsp

Instructions

  1. Toast almonds and grind in a mixer.

  2. Split the ground almonds: half into a bowl with coconut flakes.

  3. Blend dates and raisins in a mixer.

  4. Add honey and combine with the almond-coconut mix; stir by hand.

  5. Shape into round candies.

  6. Toast peanuts and grind in a mixer.

  7. Melt dark chocolate in the microwave defrost mode with vegetable oil.

  8. Stir ground peanuts into the melted chocolate.

  9. Coat each candy in the chocolate peanut mixture.

  10. Refrigerate 5 to until set.
