  • 150 gmixed nuts

    almonds, hazelnuts, cashews, peanuts, sunflower, 30g each, roasted

  • 200 gcacao mass

    grated

  • 100 gcacao butter
  • 2 tbspdate syrup
  • 30 gdried cranberries
  • 30 gwhite chocolate
  • 20 gcoconut flakes
  • 30 graisins
  • 1 tbspsyrup

    date, agave or honey, for orange filling

  • orange zest

Instructions

  1. Roast 30g each of almonds, hazelnuts, cashews, peanuts and sunflower seeds at 180°C for .

  2. Melt 200g cacao mass and 100g cacao butter over a water bath and warm to 44-46°C; stir in 1-2 tablespoons date syrup.

  3. Cool the chocolate to 22°C while stirring, then rewarm gently by 2 degrees to temper.

  4. Fill 5 sets of moulds: cranberry + cashews, white chocolate + hazelnuts, coconut flakes + almonds, raisins + sunflower, orange zest in syrup + peanuts.

  5. Cool at room temperature for 2-; if the chocolate does not set, freeze for before unmoulding.
