- 4 tbspbrown rice flour
- 50 goats
- tspdry garlic
- pinchblack pepper
- pinchItalian dried herbs
- sun-dried tomatoes

for pan-frying
Instructions
Grate the zucchini, carrot and potato, salt the zucchini and squeeze out excess moisture.
Mix the grated vegetables with grated mozzarella, chopped chives, parsley, 2 eggs, 4 tablespoons brown rice flour and 50g oats.
Season with dry garlic, black pepper, Italian herbs and stir in chopped sun-dried tomatoes until the mix holds together.
Heat olive oil in a skillet and pan-fry spoonfuls of the mixture on both sides until deeply golden and crisp.
