  • 1zucchini

    grated, salted and squeezed

  • 1carrot

    grated

  • 1potato

    grated

  • 60 gmozzarella

    grated

  • chives

    chopped

  • parsley

    chopped

  • 2eggs
  • 4 tbspbrown rice flour
  • 50 goats
  • tspdry garlic
  • pinchblack pepper
  • pinchItalian dried herbs
  • sun-dried tomatoes

    chopped

  • olive oil

    for pan-frying

Instructions

  1. Grate the zucchini, carrot and potato, salt the zucchini and squeeze out excess moisture.

  2. Mix the grated vegetables with grated mozzarella, chopped chives, parsley, 2 eggs, 4 tablespoons brown rice flour and 50g oats.

  3. Season with dry garlic, black pepper, Italian herbs and stir in chopped sun-dried tomatoes until the mix holds together.

  4. Heat olive oil in a skillet and pan-fry spoonfuls of the mixture on both sides until deeply golden and crisp.
