2-Ingredient Lentil Spinach Breakfast Pancakes
Flourless lentil and spinach pancakes with two variations: rolled with cream cheese and salmon, or cheesy with green onions. No flour, gluten or yeast.

Ingredients
- 150 gred lentils
soaked
- 75 gspinach
fresh
- 240 mlwater
- salt
to taste
- green onions
- 100 gcheese
grated
- 1 tbspolive oil
- cucumber
for filling
- salmon
lightly salted, for filling
- basil
for filling
- lemon juice
- black pepper
- 30 gcream cheese
Instructions
Soak lentils for a few hours, rinse and drain
Blend lentils with spinach, water and salt
Divide the batter in half
First half: add green onions only
Second half: add grated cheese
Fry pancakes in olive oil on both sides
Fill with cream cheese, cucumber, salmon, basil, lemon juice and pepper
Roll up pancakes into wraps
