Vegan Red Lentil Fritters
Vegan fritters made with soaked red lentils, zucchini, bell pepper and red onion. Pan-fried in olive oil until golden and served with a quick sauce.

Ingredients
- 250 gred lentils
soaked 2 hours
- 50 mlwater
- ½ tspcumin
- 1 piecezucchini
- 1 piecebell pepper
- 1 piecered onion
- black pepper
- ½ tspsalt
- olive oil
for frying
Instructions
Soak red lentils in water , then drain
Blend lentils with 50 ml water and cumin
Grate zucchini and finely chop bell pepper and red onion
Mix vegetables with lentil paste, black pepper and salt
Heat olive oil in a pan
Fry fritters on both sides until golden

Quick and cheap. My daughter makes these weekly.
Good flavor but the batter needs to rest at least 20 minutes. Mine were too loose without resting.
