Crunchy oat cookies with pan-toasted walnuts, cinnamon and vanilla, sweetened by blended apple and coconut sugar. Plant-based, egg-free and ready in half an hour.

- 50 gwalnuts
pan-toasted
- 90 goats
- 40 gcoconut sugar
- vanillin
- 4 gbaking powder
- cinnamon
a pinch
- 120 gapple
peeled and blended
- 50 mlvegetable oil
Instructions
Pan-toast 50g walnuts and grind 90g oats in a blender.
Mix the oats and walnuts with 40g coconut sugar, vanillin, 4g baking powder and a pinch of cinnamon.
Peel 1 apple, blend to yield 120g puree and stir into the dry mix with 50ml oil.
Shape into cookies on a parchment-lined tray.
Bake at 180°C for 20-, then cool before serving.
