Vegan Apple Walnut Oat Cookies (No Sugar)

Crunchy oat cookies with pan-toasted walnuts, cinnamon and vanilla, sweetened by blended apple and coconut sugar. Plant-based, egg-free and ready in half an hour.

Ingredients

  • 50 gwalnuts

    pan-toasted

  • 90 goats
  • 40 gcoconut sugar
  • vanillin
  • 4 gbaking powder
  • cinnamon

    a pinch

  • 120 gapple

    peeled and blended

  • 50 mlvegetable oil

Instructions

  1. Pan-toast 50g walnuts and grind 90g oats in a blender.

  2. Mix the oats and walnuts with 40g coconut sugar, vanillin, 4g baking powder and a pinch of cinnamon.

  3. Peel 1 apple, blend to yield 120g puree and stir into the dry mix with 50ml oil.

  4. Shape into cookies on a parchment-lined tray.

  5. Bake at 180°C for 20-, then cool before serving.
