  • 150 gflaxseed

    ground

  • 20 gcoconut flour
  • 20 gpsyllium husk
  • 1 tspcinnamon
  • ¼ tspnutmeg

    ground

  • ¼ tspcardamom

    ground

  • pinchHimalayan salt
  • 40 gdried cranberries

    unsweetened, soaked

  • 4eggs

    room temperature

  • 60 mlheavy cream
  • 60 mlbutter

    melted

  • 100 gallulose

    or erythritol

  • 1 gvanilla powder
  • 1orange zest

    from 1 large orange

  • 4 gbaking soda
  • 1 tbspapple cider vinegar
  • sliced almonds

    for topping

Instructions

  1. Whisk ground flaxseed with coconut flour, psyllium, cinnamon, nutmeg, cardamom, salt and cranberries.

  2. Beat eggs with cream, melted butter, allulose, vanilla and orange zest, then stir into the dry mix.

  3. Fold in baking soda and apple cider vinegar quickly, then shape the dough into greased loaf molds with oiled hands.

  4. Coat the tops with sliced almonds and bake at 350°F (180°C) for 45- until firm and deep golden.

  5. Cool completely before slicing to keep the crumb tender.
