Prune Carob Rice Almond Cookies (Gluten-Free)

Tender gluten-free cookies with soaked prunes, rice flour, almond flour and carob. Topped with whole almonds for a sugar-free treat.

Ingredients

  • 100 gprunes
  • 70 grice flour
  • 30 galmond flour
  • ½ tspbaking powder
  • 1½ tbspcarob
  • 1egg
  • olive oil

Instructions

  1. Soak 100g prunes in boiling water until soft, then blend until smooth.

  2. Combine 70g rice flour, 30g almond flour, 1/2 teaspoon baking powder and 1.5 tablespoons carob.

  3. Beat in 1 egg and the prune puree; add a splash of olive oil and mix into a soft dough.

  4. Shape into cookies, top each with an almond, and bake at 180-200°C for 12-.
