Soft no-bake cookies from peanut butter, mashed dates and lightly toasted almond flour with a whisper of nutmeg. Pressed with a fork and set in the freezer.

Ingredients

  • 8dates

    soaked in boiling water, pitted and peeled

  • 150 gpeanut butter
  • 2 tbspcoconut oil
  • 150 galmond flour

    lightly pan-toasted

  • ⅓ tspnutmeg

Instructions

  1. Soak 8 dates in boiling water, then pit, peel and mash.

  2. Stir the dates with 150g peanut butter and 2 tablespoons coconut oil.

  3. Mix in 150g lightly toasted almond flour and 1/3 teaspoon nutmeg.

  4. Shape into round cookies and press with a fork.

  5. Freeze for 10- until firm.
