Lemon-Ginger Almond Cookies (Gluten-Free, No Sugar)
Aromatic almond-flour cookies with ground ginger, lemon zest and a touch of juice, piped into shape and finished with sugar-free white chocolate.

Ingredients

- 3egg whites
- 35 gcoconut sugar
- 1 tspginger
ground
- lemon juice
a splash
- lemon zest
a little
- 150 galmond flour
- 35 gwhite chocolate
sugar-free, melted, optional
Instructions
Whip 3 egg whites with a mixer, then add 35g coconut sugar and beat to firm peaks.
Fold in 1 teaspoon ground ginger, a splash of lemon juice and some zest, then 150g almond flour.
Pipe the dough onto a lined baking tray into cookie shapes.
Bake at 180°C for 20- until set.
Drizzle with 35g melted sugar-free white chocolate if desired.
