Ingredients

  • 2egg whites

    1 per variation

  • 80 gcoconut sugar

    40g per variation

  • lemon zest

    from 1/2 lemon

  • 40 mllemon juice

    lemon variation

  • orange zest

    from 1/2 orange

  • 40 mlorange juice

    orange variation

  • 200 galmond flour

    100g per variation

  • coconut flour

    for rolling

Instructions

  1. Whisk 1 egg white with 40g coconut sugar, add the zest of 1/2 lemon and 40ml lemon juice.

  2. Fold in 100g almond flour gradually to form a dough, then shape into cookies and roll in coconut flour.

  3. Repeat the same dough with orange zest and 40ml orange juice for the orange variation.

  4. Press each cookie lightly with your fingers and arrange on a lined tray.

  5. Bake at 180°C for 10-.
