Ingredients

  • 60 gred lentils

    ground in a coffee grinder

  • 110 ggluten-free flour

    all-purpose

  • 2 tbspcoconut blossom sugar
  • salt
  • 150 mloat milk
  • ½ tspbaking soda
  • 1 tspapple cider vinegar

    to deglaze soda

  • ½ cupaquafaba

    liquid from canned beans

  • 1 tbsplemon juice
  • lemon zest

Instructions

  1. Grind 60g red lentils to a fine flour and mix with 110g gluten-free flour, 2 tablespoons coconut blossom sugar and salt.

  2. Stir in 150ml oat milk and a soda-vinegar mixture (1/2 teaspoon soda + 1 teaspoon vinegar).

  3. Whip 1/2 cup aquafaba with 1 tablespoon lemon juice for until glossy.

  4. Fold the whipped aquafaba and lemon zest gently into the batter.

  5. Fry on a greased pan until golden on both sides; serve with sugar-free syrup.
