- 200 gcottage cheese
- ½ tbspflaxseed
ground in a coffee grinder
- ½ tspsalt
- 3sun-dried tomatoes
chopped
- black pepper
- 40 gsunflower seeds
pan-toasted
- 2eggs
- 80 grice flour
- 40 gcorn flour
- 1 tspbaking powder
- pumpkin seeds
for topping
Instructions
Mix 200g cottage cheese with 1/2 tablespoon ground flaxseed and 1/2 teaspoon salt.
Fold in 3 chopped sun-dried tomatoes, black pepper and 40g toasted sunflower seeds.
Whisk 2 eggs with a mixer and combine.
Add 80g rice flour, 40g corn flour and 1 teaspoon baking powder; mix until smooth.
Oil your hands, shape into buns and top with pumpkin seeds.
Bake at 180°C for ; cool before serving.
