Ingredients

Ingredients updated to metric measurements
  • 200 gcottage cheese
  • ½ tbspflaxseed

    ground in a coffee grinder

  • ½ tspsalt
  • 3sun-dried tomatoes

    chopped

  • black pepper
  • 40 gsunflower seeds

    pan-toasted

  • 2eggs
  • 80 grice flour
  • 40 gcorn flour
  • 1 tspbaking powder
  • pumpkin seeds

    for topping

Instructions

  1. Mix 200g cottage cheese with 1/2 tablespoon ground flaxseed and 1/2 teaspoon salt.

  2. Fold in 3 chopped sun-dried tomatoes, black pepper and 40g toasted sunflower seeds.

  3. Whisk 2 eggs with a mixer and combine.

  4. Add 80g rice flour, 40g corn flour and 1 teaspoon baking powder; mix until smooth.

  5. Oil your hands, shape into buns and top with pumpkin seeds.

  6. Bake at 180°C for ; cool before serving.
