Moist banana bread built on 200g cottage cheese, 2 eggs, coconut flour and ripe banana. Gluten-free, sugar-free and topped with banana slices for a crown.

- 2eggs
- 1 gvanilla
- 1banana
mashed
- 200 gcottage cheese
blended smooth
- 2½ tbspcoconut flour
- 1 tspbaking powder
- 1banana
sliced, for topping
- vegetable oil
for greasing
Instructions
Whisk 2 eggs until pale and fluffy and stir in 1g vanilla.
Blend in 1 mashed banana and 200g cottage cheese until smooth.
Fold in 2.5 tablespoons coconut flour and 1 teaspoon baking powder.
Pour into a greased tin and top with slices of a second banana.
Bake at 180°C for 35- until the top is golden and set.
