Ingredients

  • 150 ghazelnuts

    pan-toasted, peeled and ground

  • 45 gcornstarch
  • 90 grice flour
  • 45 mlplant milk
  • 45 gcoconut oil
  • ¾ tspbaking soda
  • 1 tsplemon juice
  • 45 mlagave syrup
  • 1apple

    coarsely grated

Instructions

  1. Pan-toast 150g hazelnuts, peel and grind into a flour.

  2. Mix the hazelnut meal with 45g cornstarch and 90g rice flour.

  3. Stir in 45ml plant milk, 45g coconut oil, 3/4 teaspoon baking soda activated with 1 teaspoon lemon juice and 45ml agave syrup.

  4. Chill the dough for , then fold in 1 coarsely grated apple.

  5. Shape into cookies on parchment and bake at 170°C for 20-.
