- 150 ghazelnuts
pan-toasted, peeled and ground
- 45 gcornstarch
- 90 grice flour
- 45 mlplant milk
- 45 gcoconut oil
- ¾ tspbaking soda
- 1 tsplemon juice
- 45 mlagave syrup
- 1apple
coarsely grated
Instructions
Pan-toast 150g hazelnuts, peel and grind into a flour.
Mix the hazelnut meal with 45g cornstarch and 90g rice flour.
Stir in 45ml plant milk, 45g coconut oil, 3/4 teaspoon baking soda activated with 1 teaspoon lemon juice and 45ml agave syrup.
Chill the dough for , then fold in 1 coarsely grated apple.
Shape into cookies on parchment and bake at 170°C for 20-.
