  • 2egg whites

  • 100 gcoconut sugar

    ground, use 2 tablespoons of the ground sugar

  • 3 tbspcoconut flour
  • 70 gcashews

    raw, unroasted

Instructions

  1. Preheat the oven to 160°C. Grind 100g coconut sugar and measure out 2 tablespoons of the ground sugar.

  2. Whip 2 egg whites with a pinch of salt until fluffy, then beat in the ground coconut sugar until glossy.

  3. Fold in 3 tablespoons coconut flour and 70g raw cashews. Spoon mounds onto a lined baking sheet.

  4. Bake at 160°C for . Repeat the same batter with 70g raw walnuts for a second variation.
