Fragrant oat cookies with blended raisins, fresh orange juice, zest from two oranges and a sprinkle of sunflower seeds. Sweetened with erythritol, no eggs or dairy.

Ingredients

  • 200 goats
  • 120 graisins

    blended with orange juice

  • pinchsalt
  • 2oranges

    zest only

  • 140 mlorange juice
  • 30 mlvegetable oil
  • 1 tsperythritol

    sugar substitute

  • 2 tbspsunflower seeds

Instructions

  1. Blend 120g raisins with a little orange juice to form a paste.

  2. Mix 200g oats with a pinch of salt, the zest of 2 oranges, 140ml orange juice, 30ml oil and 1 teaspoon erythritol.

  3. Stir in the raisin paste and 2 tablespoons sunflower seeds.

  4. Spoon onto a parchment-lined tray and shape into round cookies.

  5. Bake at 180°C for 25-, then cool on the tray.
