Ingredients

- 60 gwalnuts
rinsed and lightly dried in the oven
- 500 gapples
baked in the oven, about 400g puree after blending
- 20 ggelatin
- 2 tbspsyrup
Jerusalem artichoke, agave or your preferred syrup
Instructions
Rinse 60g walnuts and dry them lightly in the oven.
Bake 500-600g apples in the oven until soft, then blend in a mixer to get about 400g of apple puree.
Dissolve 20g gelatin with 1-2 tablespoons syrup and warm gently until it just starts to boil, but do not let it boil.
Whip the apple puree with the gelatin-syrup mixture until airy, then stir in the walnuts.
Transfer to a mould and chill in the fridge for 1- until the pastille is set and sliceable.
