Ingredients

Ingredients updated to metric measurements
  • 60 gwalnuts

    rinsed and lightly dried in the oven

  • 500 gapples

    baked in the oven, about 400g puree after blending

  • 20 ggelatin
  • 2 tbspsyrup

    Jerusalem artichoke, agave or your preferred syrup

Instructions

  1. Rinse 60g walnuts and dry them lightly in the oven.

  2. Bake 500-600g apples in the oven until soft, then blend in a mixer to get about 400g of apple puree.

  3. Dissolve 20g gelatin with 1-2 tablespoons syrup and warm gently until it just starts to boil, but do not let it boil.

  4. Whip the apple puree with the gelatin-syrup mixture until airy, then stir in the walnuts.

  5. Transfer to a mould and chill in the fridge for 1- until the pastille is set and sliceable.
