Savory Zucchini Oat Muffins (Plus Lazy Pizza)

Fluffy savory muffins with grated zucchini, bell pepper, oats and cheese, baked until golden. Leftover batter is pan-fried into a quick lazy pizza.

Ingredients

  • 300 gzucchini

    excess liquid removed

  • 1bell pepper
  • 70 gcheese
  • salt
  • black pepper
  • 1 tbspsour cream
  • 2eggs
  • dill

    chopped

  • 120 grice flour
  • 1 tspbaking powder
  • 100 goats

    ground

  • olive oil

    for greasing

  • parmesan

    for lazy pizza topping

Instructions

  1. Drain 300g grated zucchini and mix with chopped bell pepper, 70g cheese, salt, black pepper and 1 tablespoon sour cream.

  2. Whisk in 2 eggs and chopped dill.

  3. Stir 120g rice flour with 1 teaspoon baking powder and add to the batter.

  4. Blend 100g oats to a flour and fold in.

  5. Grease muffin molds with olive oil and bake at 200°C for 20-, using top-and-bottom convection for the final .

  6. For the lazy pizza, spread the remaining batter in an oiled pan, fry on both sides and finish with a sprinkle of parmesan.
