  • 70 gwalnuts
  • 250 ggluten-free flour
  • 50 gcoconut sugar
  • 1 tspbaking soda
  • 1 tspbaking powder
  • ⅓ tspvanilla
  • 3bananas

    about 380g, blended

  • 100 mlcoconut milk

    or oat milk

  • 90 gvegetable oil
  • 2 tbsplemon juice
  • 50 gdried cranberries

Instructions

  1. Mix 70g walnuts with 250g gluten-free flour, 50g coconut sugar, 1 teaspoon baking soda, 1 teaspoon baking powder and 1/3 teaspoon vanilla.

  2. Blend 3 bananas (about 380g) smooth in a mixer, then stir in 100ml coconut or oat milk, 90g vegetable oil and 2 tablespoons lemon juice.

  3. Combine wet and dry ingredients, then fold in 50g dried cranberries.

  4. Pour the batter into a lined loaf tin and bake at 180°C for .

  5. Cool completely and decorate with melted chocolate if desired.
