Sugar-Free Corn Kefir Chia Pancakes (No Wheat)

Golden cornmeal pancakes bound by kefir and a chia egg, lightly sweetened with erythritol. Fried crisp, served with sour cream and syrup for a lean breakfast.

Ingredients

Ingredients updated to metric measurements
  • 1 tbspchia seeds
  • 3 tbspwater

    for the chia egg

  • 450 mlkefir

    1% fat

  • ⅓ tspbaking soda
  • 2 tbsperythritol
  • pinchsalt
  • 165 gcornmeal

    150-180g, sifted

  • 125 mlwater

    about half a cup, to loosen

  • vegetable oil

    for frying

Instructions

  1. Mix 1 tablespoon chia seeds with 3 tablespoons water and let thicken for a few minutes.

  2. Whisk 450ml kefir with 1/3 teaspoon baking soda, 2 tablespoons erythritol and a pinch of salt.

  3. Stir in the chia gel and 150-180g sifted cornmeal.

  4. Add about 1/2 cup water to reach a pourable batter.

  5. Fry the pancakes in a little oil until golden on both sides and serve with sour cream and sugar-free syrup.
