Oat Whole-Wheat Yeasted Loaf (Grandma's Recipe)

Traditional yeasted loaf of 80g oats soaked in warm water, honey, 120g whole wheat and 340g bread flour. Triple-proofed and rolled in oats for a rustic bakery crust.

  • 80 goats
  • 300 mlwater

    warm

  • 35 ghoney
  • ½ tspsalt
  • 35 golive oil
  • 50 gwarm milk

    can be plant milk

  • 120 gwhole grain wheat flour
  • 4 gdry yeast
  • 340 gbread flour

Instructions

  1. Soak 80g oats in 300ml warm water for , then stir in 35g honey, 0.5 teaspoon salt, 35g olive oil and 50g warm milk.

  2. Combine 120g whole grain flour with 4g dry yeast, add to the oat mixture with 340g bread flour and knead into a smooth dough.

  3. Oil a bowl, cover and rest the dough , then punch down and rest another hour.

  4. Shape the loaf, brush with water and roll in oats, then proof 10 more minutes in a floured tin.

  5. Bake at 220°C for until crisp and hollow-sounding. Cool completely and eat within 3 days.
