Oat-Crumb Banana Butter Cake with Lemon

Tender butter cake with toasted oat crumbs, a hidden layer of blended banana and a bright squeeze of lemon. Baked in an 18cm tin for a family-friendly teatime slice.

Ingredients

  • 15 gbutter

    for toasting oats

  • 70 goats

    or 5-grain mix, pan-toasted

  • 125 gbutter

    softened

  • 130 gsugar
  • 2eggs
  • 1lemon

    juiced

  • 135 gflour

    1 cup

  • ½ tspbaking powder
  • 2bananas

    blended, plus extra slices for decoration

Instructions

  1. Toast 70g oats in 15g butter until browned, then set aside.

  2. Cream 125g softened butter with 130g sugar, then beat in 2 eggs and the juice of half a lemon.

  3. Whisk in 135g flour and 1/2 teaspoon baking powder, then fold in the toasted oats.

  4. Line an 18cm tin, press the batter in and make a well, then spread the blended bananas on top and decorate with banana slices.

  5. Bake at 180°C for , cool fully and slice.
