- 2eggs
- 70 gsugar
- 100 mlmilk
- 90 mlvegetable oil
- 2apples
large, 500 g, grated
- 1lemon zest
- 90 gwalnuts
about 80-100 g
- pinchsalt
- 1 tspcinnamon
- lemon juice
- 10 gbaking powder
- 150 goat flakes
- 200 gflour
Instructions
Whisk eggs with sugar, milk, oil and lemon juice until smooth.
Grate the apples on a coarse grater; fold in with lemon zest, walnuts, salt and cinnamon.
Stir in baking powder, oat flakes and flour to form a thick batter.
Divide between muffin cups.
Bake at 180 °C for 40-. Cool before serving.
