  • 85 gpumpkin seeds

  • 85 gsunflower seeds

    pan-toasted

  • 65 gsesame seeds

    pan-toasted

  • 20 gflaxseeds
  • 70 mldate syrup
  • 85 gwhite chocolate

    sugar-free

  • 1 tbspvegetable oil

Instructions

  1. Pan-toast 85g pumpkin seeds, 85g sunflower seeds and 65g sesame seeds, then pulse lightly in a blender.

  2. Mix with 20g flaxseeds and 70ml date syrup until the mass holds together.

  3. Press into an oiled mould and chill briefly in the fridge to firm up.

  4. Melt 85g sugar-free white chocolate with 1 tablespoon oil and spread over the seed layer.

  5. Return to the fridge until the chocolate sets, then break into brittle pieces.
