Classic Norwegian-style yeasted whole-grain loaf with 300g whole wheat flour, toasted pumpkin and sunflower seeds, flax and a sesame crust. Tender, aromatic and rustic.

Ingredients

- 300 gwhole grain wheat flour
2 cups
- 8 gdry yeast
1 tbsp
- salt
to taste
- 240 mlwarm water
1 glass
- 1 tbspsugar-free syrup
- olive oil
- 30 gpumpkin seeds
pan-toasted
- 30 gsunflower seeds
pan-toasted
- 30 gflaxseed
- sesame seeds
for topping
Instructions
Mix 300g whole grain wheat flour with 8g dry yeast and salt.
Pour in 240ml warm water and 1 tablespoon sugar-free syrup, add a little olive oil and knead to a smooth dough.
Rest at room temperature, then fold in 30g pumpkin, 30g sunflower and 30g flaxseeds by hand.
Transfer to an oiled loaf tin, brush with olive oil and sprinkle sesame seeds over the top.
Bake at 180°C for 40- until the crust is deeply golden and crisp.
