No-Bake Walnut Sunflower Cocoa Truffles

Hand-shaped truffles from toasted walnuts and sunflower seeds pulsed with soft dates and cocoa. Rolled flat, cut into bite-size pieces and chilled to firm up.

    soaked in boiling water, pitted and peeled

  • 50 gwalnuts

    pan-toasted

  • 50 gsunflower seeds

    pan-toasted

  • 2 tbspcocoa powder

Instructions

  1. Soak 12 dates in boiling water, then pit and peel.

  2. Pan-toast 50g walnuts and 50g sunflower seeds, then blend.

  3. Mash the dates and mix with the nut-seed meal and 2 tablespoons cocoa.

  4. Roll flat between parchment sheets to an even slab.

  5. Freeze for 10-, then cut into bite-size pieces.
