Ingredients

- 150 galmonds
- 100 gwalnuts
- 130 gpumpkin seeds
- 350 gdates

- 265 gpeanut butter
or any nut butter
- 50 ggoji berries
- lemon zest
from 1/2 lemon
- lemon juice
from 1/4 lemon
- 2 tbspcoconut oil
- 30 gflaxseed
for coating
Instructions
Blend 150g almonds, 100g walnuts and 130g pumpkin seeds to a coarse crumb.
Blend 350g soft dates, 265g peanut butter and 50g goji berries; add 3-5 tablespoons water if the blender struggles.
Combine the nut crumb with the fruit paste, zest of 1/2 lemon, juice of 1/4 lemon and 2 tablespoons coconut oil.
Press into a lined tray.
Scatter 30g flaxseed on top and chill in the fridge for 1- before slicing into bars.
