Ingredients

  • 150 galmonds
  • 100 gwalnuts
  • 130 gpumpkin seeds
  • 350 gdates

  • 265 gpeanut butter

    or any nut butter

  • 50 ggoji berries
  • lemon zest

    from 1/2 lemon

  • lemon juice

    from 1/4 lemon

  • 2 tbspcoconut oil
  • 30 gflaxseed

    for coating

Instructions

  1. Blend 150g almonds, 100g walnuts and 130g pumpkin seeds to a coarse crumb.

  2. Blend 350g soft dates, 265g peanut butter and 50g goji berries; add 3-5 tablespoons water if the blender struggles.

  3. Combine the nut crumb with the fruit paste, zest of 1/2 lemon, juice of 1/4 lemon and 2 tablespoons coconut oil.

  4. Press into a lined tray.

  5. Scatter 30g flaxseed on top and chill in the fridge for 1- before slicing into bars.
