- 150 gdried apricots
- 200 gdates
- 150 gwalnuts

- 2 tbspdate syrup
or agave, maple or honey
- lemon zest
from 1 lemon
- 1 tspginger
ground
- 80 gwhite sesame
pan-toasted, for coating
Instructions
Toast 50g pumpkin seeds, then blend 150g apricots and 200g dates to a sticky paste.
Toast 150g walnuts in a pan, then stir into the fruit paste.
Simmer the mass with 2 tablespoons date syrup and zest of 1 lemon for 1-.
Stir in 1 teaspoon ground ginger and toasted pumpkin seeds, then shape into bars.
Roll each bar in 80g toasted sesame and chill for before serving.
