Lemon-Ginger Dried Fruit Nut Bars (Vegan)

Warming nut-and-fruit bars with dates, apricots, walnuts and pumpkin seeds, brightened by lemon zest and ground ginger. Rolled in toasted sesame.

Ingredients

  • 50 gpumpkin seeds

    pan-toasted

  • 150 gdried apricots
  • 200 gdates
  • 150 gwalnuts

    pan-toasted

  • 2 tbspdate syrup

    or agave, maple or honey

  • lemon zest

    from 1 lemon

  • 1 tspginger

    ground

  • 80 gwhite sesame

    pan-toasted, for coating

Instructions

  1. Toast 50g pumpkin seeds, then blend 150g apricots and 200g dates to a sticky paste.

  2. Toast 150g walnuts in a pan, then stir into the fruit paste.

  3. Simmer the mass with 2 tablespoons date syrup and zest of 1 lemon for 1-.

  4. Stir in 1 teaspoon ground ginger and toasted pumpkin seeds, then shape into bars.

  5. Roll each bar in 80g toasted sesame and chill for before serving.
