Tender flourless cake baked with oats, oat flour, chia egg and ripe peach chunks. Lightly sweetened with coconut sugar and finished with melted coconut oil.

- 2 tbspchia seeds
- 8 tbsphot water
- 130 goats
- 130 goat flour
- 150 gcoconut sugar
- salt
a pinch
- 1 tspbaking powder
- 90 gcoconut oil
melted
- 1 gvanillin
- 3peaches
sliced or cubed
Instructions
Soak 2 tablespoons chia in 8 tablespoons hot water for to gel.
Mix 130g oats, 130g oat flour, 150g coconut sugar, a pinch of salt and 1 teaspoon baking powder.
Fold in the chia, 90g melted coconut oil and vanillin until the batter is uniform.
Fold in 3 chopped peaches and spread into a 20×20cm tin.
Bake at 180°C for until a skewer comes out clean.
