Flourless Oat Apple Sponge Cake
Light sponge cake built on whipped eggs, ground oats and coconut sugar, topped with sliced apples. A 20cm everyday bake with no wheat flour.

Ingredients

- 4egg whites
- 100 gcoconut sugar
divided, 50g + 50g
- 4egg yolks
- 80 goats
ground to flour
- 1 tspbaking powder
- 2apples
sliced
- oil
for greasing
Instructions
Whip 4 egg whites with 50g coconut sugar to firm peaks.
Beat 4 egg yolks with 50g coconut sugar until pale.
Grind 80g oats to a flour and whisk in 1 teaspoon baking powder.
Fold the dry mix into the yolks, then gently fold in the whites.
Pour into a greased 20cm tin, top with sliced apples and bake at 180°C for 20-.
