Light flourless cake whipped from four eggs with corn or oat flour and date syrup, layered with fresh apple slices and a pinch of oats. A quick everyday bake.

Ingredients

- 4eggs
- 10 gbaking powder
- 80 gcorn or oat flour
- 3 tbspdate syrup
- 2apples
- oil
for greasing
- oats
a pinch, for topping
Instructions
Whip 4 eggs with 10g baking powder until airy.
Whisk in 80g corn or oat flour and 3 tablespoons date syrup until smooth.
Slice 2 apples and arrange in a greased 18cm tin.
Pour the batter over the apples and sprinkle with a pinch of oats.
Bake at 160°C for until golden.
