Moist cocoa muffins baked with oats, applesauce, oat milk and cashews. Lightly sweetened with erythritol, portioned into individual tins for quick morning grab.

Ingredients

Ingredients updated to metric measurements
  • 30 goats
  • 60 gapplesauce
  • 30 mloat milk
  • 1egg
  • 10 gcocoa powder
  • 4 tsperythritol

    3-4 teaspoons, or sugar

  • 5 gbaking powder
  • 15 gcashews
  • vegetable oil

    for greasing

Instructions

  1. Mix 30g oats with 60g applesauce, 30ml oat milk and 1 egg.

  2. Stir in 10g cocoa, 3-4 teaspoons erythritol and 5g baking powder.

  3. Fold in 15g chopped cashews.

  4. Pour into oiled 10cm muffin moulds.

  5. Bake at 180°C for and cool briefly.
