Eggs to Ground Flax: The Ratio That Replaces the Binder, Not the Lift

The egg question reaches us under almost every bread video. Vegetarians ask. Cooks with an egg allergy ask. Readers allergic to both almonds and egg whites ask. The flax egg is the answer for the binder role. One reader who tried it left a note that says it plainly: "I made this with no eggs by substituting flaxseed, turned out perfectly." Here is what that swap is, with the ratio.

The ratio, exact

One tablespoon of ground flax plus three tablespoons of warm water for every large egg the recipe calls for. Stir, then rest the mixture for five to ten minutes until it thickens into a gel. The gel is the flax egg. Add it where the recipe asked for the egg.

The rest is not optional. Without it, the flax sits as loose seeds in the dough and the binder role does not come through. With it, the dough holds the same way it holds with the egg.

Where the swap works, and where it does not

The flax egg replaces the binder role. In breads that use eggs to hold the crumb together, and most of the seed-and-flour loaves on the site fall in this category, the swap is direct and the loaf rises the same way. The flax egg does not replace the lift role. In a recipe built around whipped egg whites, beaten meringue, or a structural egg foam, the flax egg will not carry the air.
